    Rinse 5 Chicken Leg Quarters, pat dry, and marinate with ingredients listed below for one hour or best overnight

    Add 8 cups Water, Chicken and the spices below to a pot, simmer on medium heat for 15 -20 minutes

    Remove Chicken from the pot, place onto a wire rack tray, pat chicken dry with paper towels and let it sit for 15 minutes

    Heat 3-4 cups neutral oil to 350°F temp, fry each sides for 1 minute then place on wire rack tray

    Heat oil to 400°F temp, place Chicken on a large metal slotted or strainer spoon

    Using a metal ladle, carefully pour the hot oil over the skin side evenly. Continue doing this step for 2-3 minutes or until you achieve the desired crisp to the skin

    Place Chicken on wired rack tray

    Add 2-3 Tbsp of Knorr Tomato Bouillon & Chicken Flavor Seasoning to the water before cooking

    Mix well

    To a bowl, add 1 cup chopped Green Onions, 1/4 cup neutral oil of choice, mix, heat in microwave for 30-45 seconds

    Heat up 1 Tbsp of Annatto Seeds with 1/2 cup of Neutral oil medium low heat until the oil turns a red. Remove the seeds and discard.

    Serve Chicken with steamed white rice or Tomato Chicken Rice, Nước Chấm, Green Scallions Oil, sliced Cucumbers and Tomato
