Add each Riêu ingredients into a food processor, pulse until finely minced, add to a large mixing bowl, add the seasonings listed, mix well and set aside

Bring a pot of water to a rolling boil, add pork bones, salt, let it simmer for 5 minutes, discard water, and rinse pork bones well

Start a new pot of water for the soup broth, add parboiled pork, lemongrass, ginger, light seasoning of salt and rock sugar

Bring to a simmer, skim any impurities or foam, cover with lid, turn heat to med low and let simmer for one hour

Add the red flavor oil from the crab paste jar into a large pan. Add garlic, stir until fragrant, tomatoes, crab paste, fried tofu, spring onions. Stir until combined. Turn off heat, set aside.

After the soup has simmered for one hour, scoop and drop the rieu carefully into the broth, add the fried tofu and tomato mix, add broth seasonings to your taste preference
