Seasoning for the meat side

Using a knife, lightly scrape the pork skin side to clean it

Rinse well, dry both sides with paper towels

Lightly poke the skin using a meat tenderizer

Flip to the meat side, make a slight one inch cut

Rub seasoning throughout the meat side and into the slits only

Flip over to the skin side, lightly score

Pour Vodka or any clear alcohol onto the skin

Rub it all over using a piece of paper towel

Lightly sprinkle Kosher Salt

Using a meat hook, hang the pork up for about one hour to draw out excess moisture from the skin

Place onto a tray into the fridge with the skin side up for 24 hours but preferably 2 days to dry out the skin

After 2 days, remove from fridge, place on a cooling wired rack lined with parchment paper

Create slits in the parchment paper

Rest on counter for 20 minutes

Preheat oven to 375°F

Lightly brush Vinegar onto the skin

Bake for 20 mins

After 20 mins, remove, lightly poke the skin (not all the way through)

After 20 mins, remove and repeat with the previous step

Increase oven temp to 390°F

Lightly poke the skin then brush vinegar

Cover any part of the crackling skin that has a slight burn with a piece of foil

Dab off any excess oil you see on the skin with a paper towel

Keep an eye on the pork to ensure it doesn’t get burn, this step will help crackle any part that hasn’t yet
