These muffins are the perfect blend of apple crumble and muffin goodness!

    Preheat your oven to 400°F (200°C). Line 12 cupcake cups.

    In a large bowl, whisk together oat flour, sugar, baking powder, pecans, and salt.

    In a separate bowl, stir together oil, egg, almond milk, and vanilla. Add the dry ingredients and mix until just combined.

    Gently fold in the apple cubes.

    For the crumb topping, mix sugar, oat flour, oil, cinnamon, vanilla, and pecans until crumbly.

    Fill cupcake cups ¾ full with the batter, then sprinkle with crumb topping.
