Slice 250g tuna into cubes & dress with dash of soy, ponzu, 1/2 tsp honey (taste, adjust, enjoy)

Char 2 x sprigs spring onion, 2 x shallots, 2-3 cloves garlic, 1 x green tomato & 1 x jalapeño in a smoking hot pan coated with olive oil then add to a food processor with 1 x avocado, squeeze lime juice & handful of coriander, season with salt to taste

Fry corn tortilla in neutral oil until crisp

Assemble & top with spring onion (thinly slice the green ends & leave in iced water to make it curl like this, not essential but cute & fun) fresh shallots, lime juice
