Pork & Prawn Laksa
A combination of the best things for the Byron food closing ceremony

Combine pork ingredients & roll out into small meatballs

Peel prawns, heat sesame oil in a large heavy based pot & add prawn heads, tails, shells & crush into the oil until fragrant

Remove & discard shells, add and cook off garlic in prawn oil - stir through 1 tsp white sugar, juice of 1 lime

Add laksa paste & cook off for 1-2 minutes, add coconut milk & bring to the boil then turn heat down to a simmer - check seasoning & adjust (lime juice or fish sauce depending on what it needs)

Fry off meatballs separately & set aside

Into laksa add broccolini, prawns for 1-2 mins

Add meatballs, remove from the heat

Ladle over cooked noodles & top with fresh coriander, finely sliced red onion, crispy shallots, crispy chilli, fresh lime etc
