Thai Beef Salad
Quick, easy, fresh week night dinner that makes perfect leftover lunch

Bring steaks to room temp on the bench, cover with salt & a dash of fish sauce

Combine all salad ingredients in a large bowl - I usually lightly pickle the onion by leaving it sliced in the fridge covered with some cold water & vinegar while I prep the rest of the veg but this is optional if you can be bothered / have the time

Combine all dressing ingredients & adjust to taste (more fish sauce & sugar if too sour, more lime juice & sugar if too salty and more fish sauce & lime if too sweet, you get it)

Sear steaks until medium rare, slice, add to salad, dress, cover with crispy shallots, enjoy enjoy
