Autumn truly is the season for cosy food. These veggie muffins are perfect for a savoury breakfast, a light lunch or a delicious on the go snack!

    Grate the carrot and courgette and squeeze out any excess liquid using a cheesecloth or towel.

    Mix all of the above ingredients and divide into muffin cases.

    Sprinkle some extra oats and grated cheese on top and bake for 20-25 minutes until golden brown.
