Broccoli Cheddar Soup

Ingredients

Directions

    Add the olive oil, butter, onion and garlic to a pan and cook for a few minutes until soft.

    Add in the grated carrot and cook for another few minutes.

    Add in the flour and cook for a further few minutes.

  4. 4

    Add in your chicken stock, water, milk and cream. Add in the seasoning and mix well.

  5. 5

    Bring this up to a low boil and add your grated cheese. Cook this for a few minutes until the cheese is melted.

    Add in the chopped head of broccoli and cook for a further 20-25 minutes on a medium to low heat.

    Serve warm with crusty bread!


Notes

This will last up for 2-3 days in the fridge.
