Chewy Pumpkin Cookies

    Take your pumpkin puree and squeeze all of the liquid out with either a cheese cloth or dish towel.

    To a mixing bowl, add the white and brown sugar and the butter. Mix this together until smooth.

    Add in the pumpkin, vanilla and pumpkin spice and mix well.

    Fold in the flour slowly, make sure you don’t over mix it.

    Once it has started to come together add in your chopped chocolate.

    Roll your cookie dough into balls and press on to the baking tray lightly.

  7. 7

    Make sure you space them out as they do spread.

    Bake them for 10-12 minutes at 180 degrees.

    If they are still soft in the middle, leave them to cool fully and they will firm up!
