Mini Goat Cheese Tarts

    Add your chopped onions and olive oil to a pan and cook on a low heat until soft, stirring occasionally. If the onions are sticking, add a splash of water.

    Once the onion are soft, stir in the brown sugar and balsamic vinegar and cook on a low heat for another 5-10 minutes.

    Roll out your puff pastry and either cut into squares or use a round cookie cutter.

    Add the goats cheese, creme fraiche and salt and pepper and mash together with a fork until smooth.

    Add a few spoonfuls of the goat cheese mixture into the centre of the pastry and spread evenly. Make sure you leave a gap at the edge for the pastry to puff up.

    Add on your caramelised onions, brush the edges with egg wash and bake for 15-20 minutes at 180 degrees celcius.

    Sprinkle some chopped parsley on top and enjoy.
