    Preheat your oven to 400°F (200°C). Pierce the sweet potato with a fork and bake it directly on a baking dish for 45-60 minutes, or until soft. Let it cool slightly.

    Melt the dark chocolate using a double boiler or in the microwave, stirring frequently until smooth.

    Scoop the flesh from the sweet potato into a blender or mixer. Add the melted chocolate and blend until smooth and creamy.

    Transfer to bowls or glasses and refrigerate for at least 30 minutes before serving.
