In a large bowl, mix together pumpkin purée, flour, sugar, an egg, and baking powder until smooth.

Grate fresh orange zest into the dough to add a citrusy flavor.

Heat oil in a deep pan over medium heat until it reaches about 350°F (175°C). Ideally, use a food thermometer to check the oil temperature. If you don’t have one, you can test the oil by submerging the tip of a toothpick into the oil; if it bubbles around the toothpick, the oil is hot enough.

Scoop about a tablespoon of dough, and with slightly wet hands to avoid sticking, form small balls.

Carefully drop the dough balls into the hot oil, frying in small batches of about 4 at the time to avoid overcrowding the pan. Fry them for about 4-5 minutes, turning occasionally, until golden brown on all sides.

Remove the fritters from the oil and let them drain on a paper towel. While still warm, roll them in cinnamon sugar to coat.
