Irresistibly delicious pistachio ice cream bites

    Whip cold heavy cream in a bowl until it's starts to become stiffer.

    Add the pistachio butter and combine it well.

    Scoop the mixture with an ice-cream scoop or a large spoon and place on a parchment-lined tray.

    Freeze the scoops for 2-3 hours, or until firm.

    Melt the chocolate in a double boiler or in the microwave until smooth with a bit of coconut oil.

    Dip the frozen pistachio scoops into the melted chocolate, letting the excess drip off.

    Place the dipped scoops back on the tray and sprinkle chopped pistachios over the chocolate before it sets.

    Serve the pistachio ice cream bites once after they are a bit defrosted for a creamy and delicious snack.
