Oven-Baked Crispy Butternut Squash Slices

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Peel the butternut squash and slice it into thin medallions.

Crush the Cornflakes with salt and pepper: you want the cornflakes to be in small pieces, but not completely powdered.

Dip the slices in beaten eggs and then in the cornflakes mixture. You can repeat this step twice for extra crunch if you like. One coating will be good too.

Place the coated squash medallions on the oiled baking sheet, ensuring theyin a single layer and not touching. Add a drizzle of oil on top too.

Bake in the preheated oven for about 30 minutes or until the butternut squash is golden and crispy.
