Grilled Cheese Onigiri with Kimchi Pork

An Asian version of Taco Bell's grilled cheese burrito, with grilled cheese onigiri and kimchi pork.

    Whisk together soy sauce, sugar, gochujang, cornstarch, and water. Reserve 1 1/2 teaspoon of this sauce.

    Sauté garlic and onion in oil for 1 min. Add kimchi, pork belly, and the unreserved sauce. Cook until pork is no longer pink. Set aside to cool.

    On a sheet of plastic rice, spoon some rice in the center and add some pork mixture. Add rice on top and squeeze the rice tightly to form a triangular shape. Repeat for the rest.

    Fry the rice balls on both sides over medium heat in oil and spread on the reserved sauce mixture.

    Add cheese into a pan and top with the onigiri. Cook until the cheese is melted and slightly crispy.
