Sauté onions and tomato in oil until translucent and add potato and carrots.

Add water and cover the pot to allow the veggies to soften.

Once the potatoes and carrots are slightly soft add the ketchup and curry cubes. Mix the curry so that the curry cubes dissolve.

Turn the heat to low and cover the pot. Bring the curry to a simmer and allow it to simmer for a few minutes.

Serve the curry with white rice, fried shrimp, and garnish with green onions and sesame seeds.
