A favorite in our home, especially to pair with pizza night!

    Bring a large pot of salted water to a boil. Add the orzo and cook according to the package instructions. Once done, drain and rinse the pasta under cold water to stop the cooking. Set aside to cool.

    In a large bowl, combine the cooled orzo, pesto, cubed cheddar cheese, and chopped sun-dried tomatoes.

    Add 1 teaspoon of salt (or to taste) and toss everything together until the pasta is evenly coated with pesto.

    Cover the salad and refrigerate for at least 30 minutes to allow the flavors to blend.

    Once chilled, give it a quick stir and serve cold.
