    In a large bowl, combine cottage cheese, eggs, flour, milk, baking powder, cinnamon, honey, and salt. Mix well until the batter is smooth and everything is fully combined.

    Lightly grease a frying pan or skillet with butter or oil, and heat over medium heat.

    Pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown. Repeat until you’ve made six medium-sized pancakes.

    In a separate pan, sauté sliced apples with a little butter, coconut sugar, and cinnamon until tender and golden.

    Stack the pancakes, top with the sautéed apples, a dollop of homemade whipped cream, and a drizzle of maple syrup.
