    finely dice the onion garlic and soak the tamarind in a cup of hot water for 10 minutes. Remove the seeds and run it through a sieve to get a smooth tamarind juice.

    suate the onion and garlic in a bit of olive oil. Add the tomato puree the tamarind juice. Add a cup of water and let it simmer covered for 15 minutes.

    serve it with any rice recipe and enjoy.
