Mince the garlic and set aside.

Cut the pork belly into small cubes and place in a bowl.

Add the ground pork, garlic, brown sugar, salt, black pepper, paprika, oyster sauce, soy sauce, vinegar, and sriracha to the bowl. Mix until everything is well mixed and incorporated.

Place a plastic cover on the bowl and let marinate overnight.

The next day, make sausage links by cutting small rectangles of parchment paper, placing a spoonful of longganisa in the middle, and folding it over lengthwise.

Slide the parchment paper towards you to make a sausage link, and roll the link over the remainder of the parchment.

Repeat and store in a ziplock bag and store in the fridge or freezer.

If you are in a rush, make sausage patties instead.

Fry the links or patties on medium low heat with a little oil until browned on both sides.

You can also cook them in the air fryer for 5-7 minutes at 375* F.
