Blueberry Pork Adobo

The Korean blueberry vinegar used in this recipe has a nice sweetness to it that balances the dish.

    Cube the pork belly and set aside.

    Heat a large pan or wok, and sear the pork belly on both sides. Sear in batches if needed.

    Once the pork is seared, remove from the pan. Add the garlic and stir fry until it gets some color.

    Add the pork back in, along with the soy sauce, oyster sauce, bay leaves, and black peppercorns. Mix well.

    Add the blueberry vinegar, then bring it to a boil. Let cook for 2 minutes.

    Bring down to a simmer and cover it with a lid, and cook for 40 minutes or until tender.

    Serve warm. You can garnish with blueberries and lemon zest on top if you like.
