Pre heat the oven to 190℃. Line 1 or 2 large baking trays with parchment paper.

Drop the oil into 6 evenly spaced areas (ensuring the pastry doesn’t touch between them so roughly 5cm apart).

Onto each, divide the honey, thyme and vinegar.

Gently nestle the onion wedge and slice of halloumi onto of these flavours so they are setting next to each other.

Top with a square of puff pastry, pressing into firmly close the edges. Crimp shut with a fork is optional.

Brush or spray with oil, sprinkle each with sea salt and bake for 8-10 minutes or until golden and crispy.
