Cinnamon Sugar Apples

Preheat the oven to 180℃.

In a small bowl, combine the green apple slices with the cinnamon and sugar. Mix well and set aside.

In a medium bowl, mix together the dry ingredients (flour, baking powder and spices).

In a large mixing bowl, whisk the eggs, oil and sugar together until just foaming. Add the dry ingredients, fold together before adding the milk (consistency should be runny). Fold the diced apples through the mixture.

Arrange the apples around a greased or lined 15cm cake tin (an arrangement is fine). Pour the batter over the apples, tap to flatten and place into the oven for 35-40 minutes or until a skewer comes out clean when inserted.

Leave to cool for 5 minutes before removing the cake from the tin, slice and enjoy warm.
