Sweet Potato Nachos with Pumpkin Seed Cilantro Dressing

Preheat your oven to 350F and prepare a baking sheet with parchment paper.

Soak pumpkin seeds in boiling water

Rinse and clean potatoes. Thinly slice and spread out on the baking dish.

Bake for 10 minutes, flip and bake for another 10 minutes. The potatoes are done when they are soft and slightly golden on either side.

Let the potatoes cool and crisp up.

In the meantime, make your dressing. Put drained pumpkin seeds and the rest of the dressing ingredients in a blender and blend until smooth.

Gather all the ingredients for the nachos

Spread potatoes on a serving plater or large plate. Top with tomato, olives, cilantro, avocado, dressing, pumpkin seeds and pickled onions.
