Almond Butter Cherry Tarts
The perfect balance of nutty and fruity. They are no-bake and make for such a refreshing summer treat.

Soak cashews in boiling water for ~30 minutes (or room temperature water overnight).

Pit and soak dates to soften.

In a food processor, combine dates, almond flour, almond butter, vanilla extract and sea salt. Blend until the mixture starts to form together.

Using a spoon or cookie dough scoop, press the crust mixture into a silicone muffin tray.

In a blender, add cashews, coconut milk, frozen cherries, coconut oil, maple syrup and vanilla extract. Blend until smooth and creamy!

Add the filling over the crust and top with cherries.

Transfer the tray to the freezer for 4-5 hours.

When you’re ready to enjoy, pop out your tarts and enjoy!
