My Go-To Pesto
Packed with fresh herbs and easy to digest thanks to the sprouted pumpkin seeds

Preheat oven to 350F.

Spread pumpkin seeds out on a baking sheet and bake for 7-10 minutes or until golden.

Let the pumpkin seeds cool down until they are cool to the touch.

In a food processor, add bumpkin seeds, basil, parsley, olive oil, lemon juice, garlic and salt. Blend until smooth.

Transfer to a container and keep in the fridge.

Serve with pasta of choice and cherry tomatoes!
