Thai Curry with Chicken and Vegetables

    Heat the oil in a large pan or wok.

    Add minced ginger, garlic and chillies, and stir for few seconds.

    Add some onions, lemongrass and cook for few seconds.

    Next add the Thai curry paste and cook well till the oil separates.

    Add the chicken pieces and cook for 5-6 minutes or till the chicken pieces are almost cooked.

    Reduce the heat and carefully add the coconut milk or cream.

  7. 7

    Add some maple syrup, fish sauce, soy sauce and sprinkle salt according to your taste.

    Snip lime leaves and give it a quick stir.

    Simmer for 2 minutes.
