Charred Salsa with Raw Mango
Roasting raw mango is a very common practice in India, it adds smokiness and brings out their best flavor.

Cut the raw mango into half lengthwise.

Heat your pan over medium heat and place tomatoes, raw mango (cut side facing the pan), and roast them for 3 minutes.

Add your green chilli or jalapeño and garlic cloves. Keep turning them to get nice char all over the vegetables and raw mango.

Let the vegetables cool down and then add all of them to the food processor (scoop out the mango pulp and then add).

Snip in cilantro and add salt, blitz to chunky consistency, you can pound it in a mortar and pestle too.

Add chopped onions, squeeze lemon to your liking and serve with Nachos or top over your tacos.
