This traditional Indian sweet, with its rich history and heritage, brings together the simplest ingredients – milk, sugar, and a touch of cardamom – and transforms them into a symphony of flavors and textures.

    In a heavy-bottomed pan, melt ghee and add water, now milk and bring the milk to a boil.

    Once the milk is boiling, add sugar and reduce this mixture gradually while stirring continuously till it decreases to half its quantity.

    Now with a dropper add 7-8 drops of vinegar, and stir vigorously. Continue stirring and high flame. Be careful of the spluttering, and continue to stir.

    Now, add cardamom powder to the mixture. Keep stirring and add 2 more Tablespoons of Ghee.

    Cook the mixture until it thickens and starts to leave the sides of the pan, milk and sugar caramelises nicely. It should have a fudgy consistency.

    Transfer this mixture to a greased plate or tray. Spread it evenly.

    Now cover it with a thick blanket and leave it overnight or minimum 8 hours.

    With a knife release from the edges, u mould and cut into desired pieces.

    Garnish with more chopped pistachios and serve.
