Miso Caramel Walnuts

Combine white miso, brown sugar, mirin & water in a saucepan until sugar has dissolved. Stir in toasted walnuts then spread on a baking sheet to cool.

Brown butter and then stir in white miso.

Mash bananas well and add brown butter/miso, eggs, sugar, brown sugar, greek yoghurt and vanilla essence.

Sift in flour and baking soda. Fold gently to combine.

Transfer to loaf pan. Preheat oven to 175 degrees Celsius and bake for 45-50 minutes or until a skewer comes out clean.
