Carrot Cake
people who dislike carrot cake have problems (unless you’re allergic to carrots in which case.. you still do have a problem but that one you can’t help so it’s okay)

Preheat oven to 175 degrees Celsius.

Combine dry ingredients (flour, sugar, brown sugar, baking soda, cinnamon, salt).

Combine wet ingredients (eggs, oil, vanilla).

Combine dry and wet ingredients. Mixture will feel slightly drier than typical cake batter but it’s okay!

Add grated carrots and chopped walnuts. It will seem like a lot of carrots but they will shrink when they bake into the cake.

Bake for 40-45 minutes or until a skewer comes out clean.

Beat cream cheese, powdered sugar, cream, and vanilla, then spread over cooled cake. Sprinkle with chopped walnuts.
