Combine water, yeast and 20 g of sugar. Let foam up for a few minutes.

Combine the yeast mixture, flour, rest of the sugar, eggs and soft butter. Knead for 10-15 minutes.

Let rise for 1-2 hours until triples in size.

Cut into equal portions. I portioned mine into 8 buns.

Using the bottom of a cup, form a small divot in the center of each bun.

Let rise for 30 minutes.

Combine all the filling ingredients, except for lemon curd, until smooth.

Top each risen bun with the cream cheese filling and top with some lemon curd.

Brush with an egg wash.

Bake for 25-30 minutes at 325 F.
