Rinse quinoa, well and add to a pot along with one cup of water to a boil, then simmer and cover for 15 minutes or until the liquid has cooked off

Meanwhile, dice your cucumber, red onion, parsley, mint, and pistachios

In a large bowl, add the cooked quinoa, diced vegetables, and pistachios, chickpeas, feta, lemon juice, olive oil, salt, and pepper, and give everything a mix into well combined
