Ratatouille and roast chicken dinner!

Ingredients

Tomato Sauce

Ratatouille

Directions

    Sauté onion and pepper in olive oil over medium heat until softened, about 10 min

    Add garlic and sauce until fragrant

  3. 3

    Add tomatoes and balsamic and fresh thyme bundle (I tied about 5 sprigs together!)

    Season with salt and pepper

  5. 5

    Simmer for 10 minutes

    Add to a blender until smooth or use an immersion blender

  7. 7

    Pour at the bottom of a baking dish and spread evenly

  8. 8

    Preheat oven to 375

    Layer the thinly sliced veg over the tomato sauce alternating vegetables

  10. 10

    Drizzle with olive oil, add some fresh thyme salt and pepper on top

  11. 11

    Cover and bake for 1 hour. In the last 25 minutes, remove the foil and cook for the rest of the 25 min uncovered

    Top with flakey sea salt and fresh basil leaves and enjoy
