Sauté the onions and peppers in a large pot over medium high heat in avocado oil.

Once softened, add in garlic and sauté until fragrant.

Add in chopped adobo chilis and the hatch green chili’s and stir till combined.

Cook for another 2-3 minutes.

Add in spices, season with salt and pepper.

Add in canned tomatoes and beans.

Stir and cook for another few minutes.

Add in the stock and cook on medium low, stirring occasionally until the liquid has reduced and chili has thickened (about 20 minutes).

Taste and adjust for salt.
