Copycat Olive Garden Chicken and Gnocchi Soup

Directions

    Sear chicken and cook on both sides till cooked through, remove from heat and chop

    Steam or bake 4 russet potatoes till tender

    Peel and put through a potato ricer or mash until smooth

  4. 4

    Add in beaten egg, salt, pepper, Parmesan

  5. 5

    Add in flour and mix everything together lightly

  6. 6

    Dust some flour onto a clean work surface

  7. 7

    Place dough on surface and knead and fold the dough till it’s smooth and incorporated

    Take a handful of dough and roll into a thin log using your hands to roll out evenly

  9. 9

    Using a knife or bench scraper cut into 1 inch pieces, continue this process until you finish the dough

  10. 10

    Transfer gnocchi onto a flour dusted baking sheet until ready to use
