Plum Cake
Fall is for blooming chai spices in California Olive Ranch Extra Virgin Olive Oil and using that to make a delicious plum cake

Preheat the oven to 350 degrees F.

In a bowl mix together the flour, baking powder and salt.

In a small pot, bloom the chai spices in extra virgin olive oil over medium low heat until fragrant. Set aside to cool.

In another mixing bowl, cream together the butter and sugar. Add in the eggs and mix till combined. Add in the chai spiced olive oil, sour cream and vanilla bean paste. Mix until just combined

Fold in the flour mixture until just combined

Lightly coat a 10 inch cake pan in olive oil and line the bottom with parchment paper

Add cake batter to the prepared cake pan and use a spatula to spread it evenly

Top with sliced plums

Sprinkle with demerara or regular sugar

Bake for 30 minutes

Let cool before serving with whipped butter or whipped cream (drizzled with California Olive Ranch extra virgin olive oil!!)
