Tofu Parma Sandwich

    Mix chicken stock powder and water in a deep bowl. Then, slice tofu into thin squares and place into the bowl and set to the side

    Add panko crumbs, nutritional yeast, corn flour, onion powder, garlic powder, salt and pepper to a mini food processor and blitz into a fine crumb, then transfer to a shallow bowl or plate

    Remove the tofu from the stock mixture and coat well in the breadcrumb mixture on each side. Preheat the oven to 160 degrees celsius, fan forced, and line a baking tray with baking paper

    Place a frying pan over medium-high heat on the stove and add enough vegetable oil to shallow fry. Once hot, add the tofu schnitzels and shallow fry until golden and crispy on each side. Then, remove from the pan and remove the pan from the heat

    Place the tofu schnitzels on the baking tray and top with napoli sauce and vegan cheese. Place in the oven and bake for 10 minutes

    Serve tofu parmas on a Turkish roll with fresh greens and vegan mayo, and enjoy!
