Caramelised Onion Pasta

This pasta is soooo ridiculously easy to make & packed full of loads of flavour! Hope you enjoy ☺️

    Place a pot of water over the stove to boil.

    Slice the brown onions. Then, place a large, deep frying pan over medium-high heat on the stove and add the olive oil. Once the oil is hot, add the sliced onions

    Fry the onions up for ~5 minutes or until beginning to brown. Then, add the salt and raw sugar, mix well and continue frying for a further 3-4 minutes

    Once the water is boiling, add the fettuccine and cook as per packet instructions

  5. 5

    Add the soy milk, veggie stock powder and nutritional yeast to the frying pan with the onions. Reduce the heat to low, and mix well

  6. 6

    Once fettuccine is cooked, drain the water and transfer the fettuccine to the frying pan, along with the sun-dried tomatoes. Mix well, and remove from the heat

    Serve hot, with fresh parsley and black pepper, if desired
