Baked Vegan Bean and Cheese Tacos with Lime Coriander Sauce
These are such a quick & easy lunch, and the smokiness of the beans with the freshness of the sauce balance each other out perfectly

Preheat the oven to 180 degrees celsius, fan forced. Line a baking tray with baking paper

Finely dice the red onion. Place a large frying pan over high heat on the stove, add the 1 tbsp of olive oil. Once the oil is hot, add the red onion and fry for 5 minutes

Drain and rinse the black beans, then add to the frying pan. Add the paprika and cumin, and fry for a further 2 minutes

Add tomato paste, vegan beef stock powder, water and liquid smoke, mix well and reduce the heat to low. Cook for a further 3 minutes, then remove from the heat

Evenly disperse the beans and vegan cheese between the tortillas, placing them on only half so that you can fold the tortillas over. Once all the tortillas are filled and folded, transfer to the lined baking tray. Drizzle with extra olive oil if desired, and place in the oven to bake for 20-25 minutes

Whilst the tacos cook, make your sauce. Add the coconut yoghurt, lime juice, coriander, salt and pepper to a food processor and blitz until smooth

Serve the tacos hot with your fresh sauce, and enjoy!
