S'more Brownies
These s’more brownies honestly take the cake for best dessert I have ever made. Hope you enjoy the recipe!

Preheat the oven to 180 degrees celsius fan-forced and line a brownie tin with baking paper.

To make the biscuit layer, add the biscuits to a food processor and blitz into a fine crumb. Then, add the vegan butter and blitz again, until a crumbly dough forms. Set to the side.

To make the brownie layer, combine water and flax meal in a small bowl and set it to the side. Then add melted vegan butter, brown sugar, vanilla extract, soy milk and flax meal and water mixture to a bowl and mix well. After that, add flour, cocoa powder and salt and mix until a smooth batter forms. Then, fold in the dark chocolate chips.

Add the biscuit layer to the brownie tin and press down, ensuring the base of the tin is evenly covered. Then, pile the brownie batter on top and smooth out evenly.

Top the brownie batter with marshmallows, then place into the oven to bake for 50 minutes, or until a knife comes out clean.

Allow to cool completely, then slice into desired pieces. And enjoy!
