Roasted Maple Carrots with Tahini Cream
I love love loveee nothing more than some delicious roast veg with a super flavourful creamy sauce!! These carrots are crispy and sweet, and balance perfectly with the punchy flavour of tahini. I hope you enjoy!

Preheat the oven to 180 degrees celsius, fan forced. Line a baking tray with baking paper.

Mix together all of the maple carrots ingredients, minus the carrots. Once well combined, add the carrots and toss well to coat before transferring them to the baking tray. Place the carrots in the oven to roast for 30 minutes, or until they start to crisp up and brown.

Make your tahini cream. Add all tahini cream ingredients to a blender and blitz until smooth. Then, transfer onto a large serving plate and spread out evenly.

Serve the roasted carrots on top of the tahini cream, decorate with carrot tops or herbs as desired.
