Double Choc Banana Bread

My sweet treat of the week is this delicious double choc banana bread. Completely vegan and super easy to make!

    Preheat the oven to 180 degrees celsius, fan forced and line a banana bread tin with baking paper.

    Add soy milk and flax meal to a small bowl and mix well, then set to the side.

    Add flour, cocoa, baking soda, brown sugar and salt to a large mixing bowl and combine well, ensuring there are no clumps.

    Add melted vegan butter, vanilla yoghurt, pre-made flax and soy milk mixture, vanilla extract and hot water to the dry ingredients and mix well until a batter forms. Then, add the choc chips and fold in well, leaving a handful extra on the side for the topping.

    Transfer the mixture to the baking tin and top with leftover choc chips, then place in the oven to bake for 40-45 minutes, or until a knife comes out clean.

    Transfer to a wire cooling rack. Once cool, slice and enjoy with extra vegan butter or melted dark chocolate if desired.
