Lollipops From Scratch
We’re not huge on sugary candy over here, but every once in a while, the craving hits. And when my kids ask for lollipops, I go all in and make them from scratch. I’ve made lollipops for years, even when I was working long hours at my law practice. I find them therapeutic to make and you don’t need any special molds with this version. They also make cute favours for a party or any event.

Combine ingredients over medium-high heat.

Brush down the sides with water to prevent crystals.

Try to avoid stirring the mixture.

When it starts to boil, add your candy thermometer and heat to 300°F – no stirring!

Once it hits 300°F remove from heat.

Dunk the bottom of the pot in ice water to stop the temperature from rising.

Carefully (it’s hot), pour the mixture into circles on a silicone mat or baking sheet (or candy molds if you have them).

Add a bit of natural food colouring or any other toppings, insert your lollipop sticks and let cool completely before removing.
