Weeknight dinner - I like them EASY, healthy and delicious. These Turkey Air Fryer Meatballs are it! This meal is high in protein, loaded with flavour, and perfect for those busy nights—plus, it makes amazing leftovers for lunch the next day.

    Start by combining ground turkey, egg, breadcrumbs, minced garlic, chopped herbs, and onion in a bowl. Season with salt and pepper. Roll them into 12 golf ball-sized meatballs. Brush them with olive oil and pop them into the air fryer at 400°F for about 15 minutes until fully cooked.

    Chop up cucumbers, tomatoes, and red onions into tiny cubes. Add a handful of mint (fresh or dried both works), season with salt and pepper, and drizzle with lime juice (or lemon, if you’re out of limes like I was). Give it a quick mix.

    Mix plain yogurt, a little mayo, fresh lemon zest, lemon juice, a pinch of salt, pepper, and a dash of paprika.

    Now just layer it up—start with the rice, add your herby turkey meatballs, drizzle on that yogurt sauce, and top it all with a generous portion of the salad. Finish with a little olive oil drizzle, and dinner is served.
