    Warm your butter or olive oil in a large skillet over medium heat.

    Sauté the onion and garlic until softened and fragrant.

    Sprinkle in the chilli flakes for that perfect kick.

    Stir in the tomato paste, coating the onion and garlic.

    Let it cook for a few minutes until the paste darkens slightly.

    Add the vodka and cook for another minute to burn off the alcohol.

    Cook your pasta until al dente.

    Reserve about 2 cups of starchy pasta water.

    Pour the cream into the sauce, then add the parmesan and ½ cup of pasta water.

    Season with salt and pepper.
