Roast Chicken Thigh and Noodles with Peanut Sauce

    Roast chicken thighs and cook noodles.

    Make peanut sauce with cashew nuts, peanut butter, soy, honey, lime juice, mild curry powder, coconut milk and chicken stock.

    Top with crushed cashews, Demerara sugar, a tot of soy and a splat of Lao Gan Ma.

    Serve with steamed broccoli.
