Boccolotti with Pork Sausage and Mushrooms

    Pull small pieces of the pork and fry gently on a medium heat until they begin to brown.

    Reduce the heat and add a squirt of tomato purée and good chicken stock.

    While that simmers, set the pasta to boil.

    Fry a couple of finely chopped shallots in a separate pan with butter and cook for 5 minutes.

  5. 5

    Hurl in some finely chopped mushrooms and cook for a couple of minutes.

  6. 6

    Mix into the pork.

  7. 7

    Drain the pasta and combine.
