Movie Night (The Original Italian Job) with Chicken, Gnocchi and a Caper, Parmesan and Butter Sauce
Ingredients
Directions
- 1
Set oven to gas mark 3 and put a large pot of water to boil on the hob.
- 2
Slice a generously proportioned chicken breast into three large pieces.
- 3
Drizzle a little oil into a pan on a medium heat and melt a pleasing wedge of butter until it foams.
- 4
Add the chicken and fry for a few minutes - turning often, then add a tsp of honey.
- 5
Spoon the liquid over the chicken continuously until golden.
- 6
Cover with foil and lob in the oven.
- 7
Toss a packet of fresh gnocchi into the pot and cook according to the instructions on the packaging.
- 8
The sauce begins with a basic Béchamel to which you need to pour in a little chicken stock, to loosen it up.
- 9
Add finely grated parmesan, capers, a little English mustard, garlic powder, white pepper and smoked paprika.
- 10
Let the sauce simmer on a very low heat while you drain the gnocchi - I usually crisp mine up in a pan, but it’s really not necessary.
- 11
Tip the gnocchi into the sauce and mix.
- 12
Serve in a bowl and top with the chicken and your favourite chopped herbs.
